May 2013: Fresh Strawberry Mint Lemonade

I’ve grown a new kind of love for mint in drinks. The thought of having mint in a drink, whether it be in a mojito, virgin or alcoholic, or served with lemonade over ice just didn’t appeal to me. I’ve always thought it belonged with lamb or in a dip with chilli or yoghurt and cucumber. For me it was always too overpowering until recently. I don’t know what made me try it again in a drink but when I did I was hooked.

I know have it in green tea, iced or hot, with lemon sweetened with honey as a cleansing, detox drink, in lemonade or the usual way in a mojito with lashings of rum. When I came across this drink from Jessica, who writes How Sweet Eats blog. She blogs quite often and her food and photo’s look and sound amazing. Like myself she loves cocktails and this cocktail looks particularly delicious and refreshing with all the juicy bits of lemon and that bright red hue. She even suggests a splash and by a splash maybe a shot or three to make it alcohol friendly!
