Salted & Malted Oatmeal Chocolate Chip Cookie in 40secs

Now you know I must be bringing you something that is truly out of this world to be blogging twice in one week.

This cookie is the BOMB {dot} COM

Over the past few months I’ve notice this cookie in a cup popping up and down on Pinterest, one of my addictions, so I decided to create my own version for all you people on the way to your perfect summer bod. I know everyone is working towards their summer bods which usually means eating healthier/dieting, eating smaller portions and practically living in the gym. But even though you are on your regime sometimes it is okay to have a little treat every now and then, everything in moderation. So I made this cookie with you lot in mind

Really and truly, this cookie should be called ‘Single Deep Dish, Salted & Malted Low Gluten Oatmeal Chocolate Chip Cookie’ but that was really too long to put into the title. Let me just breakdown this cookie for you.

Single: This cookie is for one. Not to be shared, not to be handed out to anyone. This is for one person and one person only. Created for one serving so the only temptation is to make another one and not to eat a whole batch of cookies straight out of the oven as you would.

Deep Dish: Whether you make it in a dish, ramekin or a mug it is about an inch and a bit thick of chocolatey, oatey and gooey cookie. NOM!

Salted: Well that’s a bit obvious. It’s got salt on it and in it. But not any ordinary salt. No that’s not how we do things around here. I’m talking about smoked salt, that smells like BACON!

Malted: A little hint of malty-ness is amazing. It’s like eating a malteaser and a cookie together

Low-Gluten: Contains no flour. Uses oat flour instead which I’m not too sure whether oats contain gluten?  And is barley gluten in the same context as wheat gluten?? Anyways low gluten= Good for you!

Oatmeal: Made with oats. Chewy like an oatmeal cookie but without those fake and deceptive ‘chocolate chips’ called raisins

Chocolate Chips: UNDERSTATEMENT. Chocolate chunks. Dark chocolate preferbly.

Not only is this totally amazing, it takes a mere 40secs in the microwave. So what are you waiting for??
Get microwaving.

I’ve had a shitty few days so this cookie and a hurricane cocktail would only sort me right out.
PS. I also made a short video of me making the cookies on Instagram.

For the cookies…
1 tbsp butter, melted
1 tbsp brown sugar
1/2 tbsp maple syrup
1/2 tsp vanilla
1 egg yolk
1tbsp malt powder
3 tbsp oat flour
1/4 tsp baking powder
2 tbsp dark chocolate chunks
Pinch of smoked sea salt for sprinkling

– Combine all the ingredients together in a microwavable mug or ramekin.
– Microwave for 40 secs on high.
– Sprinkle on sea salt before tucking in

Oh So Sweet Baker’s Notes

  • If you can’t find oat flour, grind up porridge or jumbo oats in the food processor till it resembles flour.
  • For the malt powder I used Ovaltine. If you can’t find this use Milo or leave it out.
  • I used Maldon smoked sea salt. If this is unavailable use ordinary sea salt.
